Consolidated Restaurants was established in 1951 as Barb Enterprises when David Cohn opened his first restaurant in Seattle. The Barb Restaurant featured barbecue sandwiches and a range of menu items for lunch and dinner. Cohn quickly expanded the company in the 1950s and 1960s. During this same time, he also opened the Polynesia Restaurant. The 1970s brought the name Consolidated Restaurants as the company began to focus on destination restaurant concepts. The company then opened Elliott Bay Fish and Oyster Company, now Elliott's Oyster House, and Steamer's Seafood Caf in 1975. In 1983, CRI opened Metropolitan Grill, which is considered one of the top steakhouses in the United States. In 1990, the company opened its first Union Square Grill. Consolidated Restaurants is headquartered in Seattle.
