History
Hokkaido Ramen Santouka began in 1988 as a nine-seat family-run ramen shop in Hokkaido, Japan. While that region is known for its soy sauce flavored ramen, Santouka's signature shio ramen became a big hit. Today, that little family shop has expanded to 60 restaurants in 10 countries. Ramen is a simple dish but composition is everything. Santouka gets its name and inspiration from Taneda Santouka, the wandering zen monk known for his creative touches to simple Haiku poetry. You can see that inspiration manifested in the signature shio ramen, with the bright but simple pickled plum, umeboshi. Santouka is famous for its pearl-colored mild salt base Tonkotsu soup. It is simmered for about 20 hours with pork bones, vegetables, and dried fish. The size of the customized blue & white colored ramen bowl is to provide the perfect temperature for the broth to sustain its taste & warmth. Every topping is neatly laid on the surface of the soup.
