The clean, well-appointed Taco Del Mar in the Lakewood Town Centre is a franchise of the ubiquitous Seattle-based chain of taco/burrito parlors its founders call "the alternative Mexican fast food." Cathy Holloway is the owner of this one, which has been open four years and still looks newly minted, with the surfer-dude “beach shack” atmosphere of the chain. The Baja-style food is popular with the young military crowd and mall shoppers. Big sellers are the Mondo Burrito, the enchilada and taco platters, and taco salads. The food is made cafeteria style, and you call out your choices of meat, sides, cheeses, salsas and so forth as the server builds your order. They call it “feeding your inner Baja.”
