American Flatbread was started in Gladys Ford s small kitchen in Waitsfield, Vt., serving fresh flatbread baked in a primitive wood-fired earthen oven. The bakery and restaurant serves organic salads tossed in homemade vinaigrette, flatbreads with homemade organic tomato sauce that is prepared fresh in a wood-fired cauldron, organic and local in-season produce and a variety of fresh seafood, chicken and homemade sausage. Its menus also offer desserts, beer, large selection of house wines and local sodas. American Flatbread has three bakeries located in Waitsfield, Vt., Middlebury, Vt., and Los Alamos, Calif.
