Lick It Up has been serving authentic Mexican plant- based street food since February of 2017. Edgar Delfin, founder of Lick It Up first opened as a food truck in the patio of a well-known dive bar, Monarch in El Paso, TX. Delfin, influenced by the El Paso/Juarez border town curated a 100% Mexican plant-based menu emulating traditional Mexican dishes. From humble beginnings the food truck was embraced on a local and national level by the Food Network's
