I use the freshest ingredients prepared with my mom and dad's secret mixture of hot pepper flake, garlic, green onion, just the right amount of salt and ginger, and a pinch of sugar to help the fermentation process. It's a collective term for vegetable dishes that have been salted, seasoned, and fermented. The most common is a spicy cabbage dish, or side dish in traditional Korean cuisine. Koreans have been eating a version of kimchi for thousands of years. They claim that the high-fiber, vitamin-packed food helps ward off disease and aging. South Koreans insist it be spelled kimchee, instead of kimchi or kimuchi, which many consider to be Japanese variants of the Korean name.
