History
We first started working on Ume late 2017. Linda, the founder of Ume, is a sucker for the old times. When she was nineteen, she dropped out of college to intern at a farm in Oregon. There, she fell in love with the simplistic, rustic side of the countryside. Afterwards, she travelled extensively in Japan and China. Falling in love with the traditional architect there, she designed her restaurant to be similar to the buildings of Hangzhou and Kyoto. Being a huge fan of plum and its special place in the histories of Japan and China, she named the restaurant Ume. Plum is also one of the few flowers that blossoms in the harshness of winter or more symbolically, in the face of the adversity of cold. Ume changes menu very often as Linda is often finding new ways to do things. Currently, Ume is serving deconstructed omakase.
