Chef Thom Abbey and artist/entrepreneur Quincie Hydock teamed up at the start of summer 2017 to bring unique, incredibly fresh dishes to DUMBO. Thom has been working in the kitchen at Olympia Wine Bar during the week for about a year (serving the bar's regular small-bites menu), and Quincie is involved organizationally in several DUMBO-based businesses.

Chef Thom Abbey has been specializing in farm-to-table for over ten years, and we are excited to bring his expertise to Olympia Wine Bar.
