Chef-owner Abigail Hitchcock has captained this quintessential Greenwich Village French bistro since 1998. Nestled on a charming block on MacDougal Street, Camaje is home to neighborhood regulars, wine lovers, and adventurous travelers. Hitchcock, a native of Sag Harbor and trained at Peter Kump's (now the Institute of Culinary Education), draws on both traditional techniques and the modern insights of molecular gastronomy.
