Laura Aubry, owner and operator, dreamt of an organic and locally made ice cream truck as a young teen growing up in Alaska. She imagined a company that was ran by a familiar face in the community, serving a product that was adventurous in flavor and upholding trustworthy ingredients. The dream became a reality when Laura and her newly born baby had a step van converted in the Pacific Northwest, filled the gas tank and made the trek up the Alaskan Canadian Highway. The two have been slinging ice cream in South Central Alaska ever since!

The Mint Chip is locally owned and operated. Founder, Laura Aubry, prioritizes organic and local ingredients when creating unique and artisan recipes. Everything is crafted by hand and made in small batches. Specialties include ice cream, ice lollies and popsicles, scratch beverages and other frozen treats.
