My adventures traveling while working in the hospitality industry first sparked my interest in Latin American food. Aside from the abundance of Mexican restaurants and international markets, Latin food is underrepresented in our city. The food culture in St.Louis is constantly evolving and local accessibility of the timeless regional cuisines of Cuba, Puerto Rico and the Dominican Republic should be part of this evolution. Plantains are a dietary staple throughout Latin America due to their nutritional value and availability as a year round fruit.
