El Parian Mexican Restaurant is a slice of Mexican food heaven somewhat hidden away in an Eagan strip mall. Owner and chef Aldo Escoto's offerings are authentic, and authentically delicious. Fish tacos and burritos are the most popular dishes, Escoto says, but patrons will have a tough choice picking from an extensive menu. All the expected Mexican offerings are available, from a Carnitas dinner to a Tilapia taco combo. The atmosphere is colorful, fun and friendly with Aztec wall drawings, a large LCD TV and a choice of tables, booths and outdoor seating. The dining choices are lengthy, with 22 appetizers, 8 salad choices, 23 lunch offerings, 13 specialties of the house, tortas, tacos, 6 vegetarian options, and no less than 32 dinner specials, 30 combination dinners and five desserts. To wash it all down there's a selection of margaritas, imported and domestic beers, wine, Mexican soft drinks and soft drinks. Service is fast and friendly and both Spanish and English are spoken.
