Mark Firth sold his successful restaurants, Diner and Marlow & Sons, and left Brooklyn to start a small farm in the Berkshires. It wasn't long before he felt compelled to re-enter the restaurant business, with Prairie Whale in Great Barrington, serving a farm to table menu which changes daily based on local and seasonal availability.
Specialties
Farm to table/nose to tail - We buy local produce as much as possible, as well as whole animals, which our in-house butcher prepares, also making our own charcuterie and sausage. This means our menu changes daily as we use the freshest produce we can find, and go through all the different cuts of meat from each animal.
