Award-winning brewer Pete Crowley and his friend and Sausagefest organizer John Neurauter played with the idea of opening their own brewery and pub for several years before hashing out the concept of Haymarket Pub & Brewery in 2009. Crowley, who was the senior brewer at Rock Bottom in downtown Chicago for the previous 10 years, decided that 2010 was the year to branch out on his own. The two found the perfect location for the brewery at the corner of Randolph and Halsted. The space was in close proximity to the Haymarket Square Riot, which in the late 1800's spurred fair labor laws to reduce the work day to 8 hours.
