The company purchases truckloads of USDA Selected and USDA Choice navels from western United States slaughterers. The company has a crew of highly skilled butchers who bone the fresh, steer navel-short plates to produce high quality fresh and frozen beef 50 percent trimmings, outer skirt steaks, inner skirt steaks, navel pastrami pieces, beef bacon pieces, center cut navel short ribs, rib cap meat, rib finger meat, bones and edible suet. It also bones out large quantities of bone-in briskets, which the company uses to produce its nationally distributed Bea s Best Raw Corned Beef Briskets.
