Over the years while producing the Rajuncajun Crawfish Festival, Rick Boyd made many trips to New Orleans and made quite a few friends while networking in the Big Easy. In 2002 Rick organized his friends in Orlando and New Orleans and founded the Crawfish Co. of Central Florida. The company obtained their Florida Department Of Professional Regulation Hotel And Restaurant license, created the Orlando Cajun Catering/Restaurant Division, trained their employees and started doing Louisiana Crawfish Boils and Cajun catering all over central Florida. In New Orleans, Sal Junda with over twenty years in the Louisiana seafood business became GM of the New Orleans Crawfish/Cajun Foods Division shipping Louisiana products nationwide to restaurants and retail customers. Also in 2002 the Crawfish Company teamed up with Bayou Classic Outdoor Cooking Equipment, became a national distributor and started selling the Bayou Classic line of outdoor cooking equipment to cook their crawfish and Cajun foods.

The New Orleans Seafood Division supplies restaurants and retail customers with live crawfish, live blue crab, rock crab claws, gulf shrimp, oysters, alligator, frog legs, turtle meat, turducken and a complete selection of Louisiana Cajun sausages, spices and Cajun foods.
