History
Chef/owner Tom Casabona has over 45 years of experience and got his start working in the seafood houses of Cape Cod. He moved to Colorado in 1975 and met his future wife, Rose, a vietnamese immigrant, while working at the Regency Hotel in Denver, and after working in such places as the Cherry Creek Country Club and Vail, they opened their own restaurant, Rose's Cafe in 1983. Rose's Cafe was shuttered in 2003 after 20 years in business, and Tom and Rose took a road trip to the western slope and fell in love w that area. They moved to Palisade, Colorado where they opened a new restaurant named the Red Rose Cafe in 2004 which was mentioned quite favorably in several publications including Sunset Magazine and the NY Times in their travel pieces on the Palisade area. They sold their business in 2014 and retired but on a visit, saw the historic Flower Mill building for sale in Wellington and decided it would be perfect for a new restaurant, hence opening Papa's Table in 2017
Specialties
We offer a Vietnames influenced Asian Lunch w items such as noodle bowls, pho, and rice plates. One night a month, we also do an Asian Nite Dinner whose menu changes each month but can feature Seafood Curry, Orange Beef, Pad Thai, or Teriyaki chicken. At dinner on all other nights, we feature NY style southern Italian classics such as antipasta, eggplant parmesan, chicken or veal marsala, and an array of pasta choices. The chef specializes in seafood and we feature items like Lobster Cioppino, Mediteranean style Swordfish, Scampi, Seafood Lasagna, and other such choices in our nightly Specials offering. We have brunch only on Sunday. We are a chef-driven family-run restaurant, not a corporate enterprise.
