History

Cowboy Star Restaurant and Butcher Shop began in San Diego, California in 2008. Founded by Jon and Angie Weber and Chef Victor Jimenez. Now we have a second location open at University Village Colorado!

Cowboy Star aims to serve up a unique dining experience by combining contemporary American cuisine with a western flare. The Cowboy Star menu features the finest in select natural products from the nation's leading Certified Humane Angus herd along with the freshest seafood available under the Monterey Bay Aquarium's stringent Seafood Watch Standards.
