Formerly Neon Alley Bistro, the team at BISTORO in Central Plaza introduced the Bocata sandwich to Pueblo last year. The bocata, a Spanish-style hoagie, is made with marinated meats cut in house and sauteed veggies. Mediterranean and Pueblo inspired recipes make the menu a new take on some familiar tastes. The unique recipes include Garlic Bisque and Rustic 'no-greens' salads. A variety of tapas, desserts, smoothies, and lattes make for a wonderful way to dine.
