I opened a small, multi regional take out cafe, In New Orleans in February, 1997. I started with 3 employees and my business grew to a menu mailing list of 3000 and a catering staff of 42. In 2005, Hurricane Katrina made it's way to the Gulf Coast, and as a result of the levee breach, I had 14' of water in my business.
